Admit it—when you hear the word “diet,” your mind automatically conjures up sad food images. In your head, you probably picture what’s cooking thusly: steamed, unseasoned veggies, bland chicken breasts sans salt, maybe even someone maniacally throwing your unfinished pint of ice cream into oncoming traffic. It’s an incredibly stigmatized word thanks to years of preconditioning, old fads, and older-still science.
But anyone who subscribes to the Cooking Light Diet would call said stigma unfounded. And rightfully so. Where else will you find a “diet” that offers up meal plans chock-full of all the things you love eating? Cheeseburgers? We got ’em. Pasta? You bet! Quesadillas, pizzas, and casseroles? Oh yeah. This is one healthy meal plan that won’t leave you wanting for your favorite fare.

Your Dinner Could Look Like THIS
Liz Striegl reminded everyone in the Facebook Community how good these dinners can look with her Tomato Basil Risotto dinner.
Prepped for Lunch Success
New member Hillary Ward showed that she’s already reaping the rewards of meal planning with some individually packaged Quinoa and Arugula Salad Jars. No snack machine runs for Hillary come lunchtime! (Am I the only one that does that?)
Leftovers? Why Not Repurpose Some
Becky Street had some extra pot roast from the weekend, so instead of letting it go to waste, she used it to whip up some Black and Blue Quesadillas. We hope your husband did love it, Becky!
Meanwhile, Janelle McClintock used her Cooking Light Diet menus to make a favorite recipe among the men in her house. You would’ve had Ron Swanson at steak, Janelle, but the sweet taters are certainly a cherry on top.
Starting the Week Off Right
Joyce Van Huis ensured her week got off to a tasty start courtesy of Smashed Chili Cheeseburgers on a Monday night. Didn’t we say that this isn’t your regular diet fare?!
Short on Words, Big on Flavor
Speaking of “this can’t be diet food,” Lisa Alop Stahlman was amazed by her Slow Cooker Sausage Cassoulet dinner. Steak, burgers, quesadillas, and casseroles, oh my!
Peach season is coming to an end, but that didn’t stop Patricia Reidy Lawrence from one last peach-perfect meal of Pan-Grilled Chicken with Peach Salsa. Glad you enjoyed it, Pat!
A Dinner Recommendation
And if you needed a dinner recommendation, Susanne Hensel-Goodwin suggests the Vegetable Penne with Lemon-Cream Sauce. Make sure to serve with a side of Garlic-Roasted Broccoli.
One more recommendation for the road. Joyce Van Huis was really digging her dinners—she advised the rest of the Community to add Chinese Noodle Salad with Sesame Dressing to their rotations. Already have it saved in My Cookbook, Joyce!
